Robert,
Great comment on the sheer idiocy of the smothering hand of government. I agree that some basic food safety regulation is okay, and in other similar situations, but, you're exactly right, there is no reason to license barbers, stylists, etc.
Did they really compel licensing of interior decorators? What about guys who mow lawns? Or maybe let's require janitorial contractors to undergo X hours of training for proper cleaning practices. Where does it end?
Meanwhile, I recently had to let go another "highly qualified" and certified teacher because things just weren't working out. Her replacement is "unlicensed" -- better notify the proper authorities.
